Ingredients

  • 1 sheet puff pastry or pizza dough
  • 250 g caramelized onions
  • 8 anchovy fillets
  • 10 black olives
  • 2 tbsp olive oil
  • 1 tsp dried thyme (optional)
  • 1 tbsp flour (for dusting, if needed)

Instructions

  1. Preheat oven to 400°F (200°C) and prepare a baking tray.
  2. Roll out puff pastry or pizza dough into desired shape.
  3. Spread caramelized onions evenly over the base.
  4. Arrange anchovy fillets in a lattice pattern on top.
  5. Place olives evenly between anchovies.
  6. Sprinkle with thyme and drizzle with olive oil.
  7. Bake for 20–25 minutes until crust is golden and crisp.
  8. Cool slightly, slice, and serve warm or at room temperature.

Notes

  • Slow-cooked onions create the signature sweet flavor.
  • Do not overload toppings to keep crust crisp.
  • Anchovies provide essential salty balance.
  • Puff pastry gives a flakier texture, pizza dough a rustic one.
  • Best enjoyed fresh or at room temperature.
