Ingredients

  • 1 cup chopped pitted dates
  • 1/2 cup chopped pistachios
  • 1/2 cup chopped walnuts
  • 2 large eggs
  • 1/2 cup plain yogurt
  • 1/3 cup honey or maple syrup
  • 1/3 cup melted butter or coconut oil
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions

  1. Preheat oven to 350°F (175°C) and line or grease a loaf pan.
  2. Chop dates, pistachios, and walnuts into small pieces. Soak dates if dry, then drain.
  3. In a bowl, whisk eggs, yogurt, honey, melted butter, and vanilla until smooth.
  4. In another bowl, mix flour, baking powder, baking soda, and salt.
  5. Combine dry ingredients with wet ingredients and mix until just incorporated.
  6. Fold in dates, pistachios, and walnuts evenly.
  7. Pour batter into prepared loaf pan and smooth the top.
  8. Bake for 45–55 minutes or until a toothpick comes out clean.
  9. Cool in pan for 15 minutes, then transfer to a wire rack to cool completely.
  10. Slice and serve.
