Ingredients

  • 1 cup (250g) whole milk ricotta cheese, drained
  • 1/2 cup (60g) powdered sugar
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon almond extract

  • 1 tablespoon melted white chocolate
  • 1 teaspoon lemon zest
  • Pinch of sea salt
  • 3/4 cup (90g) finely chopped pistachios

Instructions

  3. Beat until smooth and creamy.

  5. Place chopped pistachios in a shallow bowl.
  6. Scoop and roll mixture into small balls.
  7. Coat each ball evenly in chopped pistachios.
  8. Place truffles on a lined tray.
  9. Chill for another 30 minutes before serving.
