Ingredients

  • 250 g (8 oz) raspberries, fresh or frozen
  • 2 1/2 tablespoons caster sugar or granulated sugar
  • 1/2 teaspoon lemon juice

Instructions

  1. Place the raspberries, sugar, and lemon juice into a small saucepan over medium heat.
  2. Stir gently as the raspberries begin releasing their juices, mashing the berries with a fork or spoon.
  3. Allow the mixture to simmer for about 3 minutes until the berries soften and the sugar dissolves completely.
  4. Remove the saucepan from the heat.
  5. Blend the mixture using an immersion blender until smooth. Alternatively, carefully transfer it to a blender.
  6. For a silky texture, strain the sauce through a fine mesh sieve into a bowl, pressing with the back of a spoon to remove the seeds.
  7. Skip straining if you prefer a more rustic texture.
  8. Allow the coulis to cool completely at room temperature.
  9. Refrigerate until chilled. The sauce will thicken slightly as it cools.
  10. Serve cold or slightly warm over desserts or breakfast dishes.

  • Frozen raspberries work perfectly and do not need to be thawed first.
  • Double strain the coulis for an ultra-smooth texture.
  • Add vanilla extract or orange zest for extra flavor.
  • Simmer longer for a thicker, syrup-like consistency.
  • Store in an airtight container in the refrigerator for up to 1 week.
  • Freeze for up to 3 months and thaw overnight before serving.
