Instructions

  1. Preheat the oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper, leaving overhang for easy removal.
  2. In a bowl, combine the crushed pistachios, oat flour, melted coconut oil, and maple syrup until the mixture resembles damp sand.
  3. Press the crust mixture firmly into the bottom of the prepared pan.
  4. Bake the crust for 8 minutes until lightly golden and fragrant.
  5. In a blender, combine the cottage cheese, eggs, vanilla protein powder, honey, vanilla extract, and almond extract.
  6. Blend until completely smooth and creamy with no visible curds.
  7. In a small bowl, mash the raspberries with lemon juice and maple syrup until slightly jam-like.
  8. Pour the cottage cheese filling over the warm crust and spread evenly.
  9. Drop spoonfuls of the raspberry mixture over the filling and swirl gently with a toothpick or knife.
  10. Sprinkle the chopped pistachios and flaky sea salt over the top.
  11. Bake for 30 to 35 minutes until the edges are set and the center still jiggles slightly.
