Salt and pepper to taste
4 red snapper fillets
1/2 lb (225 g) large shrimp, peeled and deveined
2 tablespoons Cajun seasoning
2 tablespoons olive oil
1 tablespoon butter
2 cloves garlic, minced
Juice of 1 lemon
1 cup heavy cream (for sauce)
1/4 cup chicken broth
2 tablespoons butter (for sauce)
1 tablespoon Cajun seasoning (for sauce)
1/2 teaspoon smoked paprika
1/4 teaspoon cayenne pepper (optional)
1/4 cup grated Parmesan cheese
Fresh parsley for garnish
Instructions
Bring water or broth to a boil, whisk in grits, reduce heat, and cook 20–25 minutes until creamy, stirring occasionally.
Stir in heavy cream, cheddar cheese, butter, salt, and pepper; keep warm.
Season red snapper and shrimp with Cajun seasoning.
Heat olive oil in a skillet and cook snapper 3–4 minutes per side until flaky; set aside.
In the same skillet, melt butter, sauté garlic, then cook shrimp 2–3 minutes until pink; add lemon juice and remove.
In a saucepan, melt butter, add heavy cream and broth, then stir in Cajun seasoning, paprika, and cayenne.
Simmer until slightly thickened, then stir in Parmesan until smooth.
Serve grits topped with snapper and shrimp, drizzle with sauce, and garnish with parsley.
Notes
Whisk grits slowly to prevent lumps.
Do not overcook shrimp to avoid toughness.
Adjust cayenne for desired spice level.
Substitute fish like cod or sea bass if needed.
Keep components separate for best reheating results.
