Ingredients

  • 1 pound breakfast sausage, mild or spicy
  • 1 block (8 ounces) cream cheese, softened
  • 1 can (10 ounces) Rotel diced tomatoes with green chilies, thoroughly drained
  • 1½ cups shredded cheddar cheese
  • 1½ cups Bisquick or baking mix
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon black pepper
  • Ranch dressing, for serving (optional)
  • Salsa, for serving (optional)
  • Honey mustard, for serving (optional)
  • Spicy mayo, for serving (optional)

Instructions

  1. Preheat the oven to 375°F (190°C). Line a large baking sheet with parchment paper or lightly grease it.
  2. Drain the Rotel tomatoes thoroughly using a fine mesh strainer and pat dry with paper towels to remove excess moisture.
  3. In a large mixing bowl, combine the uncooked sausage, softened cream cheese, drained Rotel tomatoes, shredded cheddar cheese, Bisquick, garlic powder, onion powder, and black pepper.
  4. Mix until a thick dough forms. Use clean hands, a wooden spoon, or a stand mixer with a dough hook attachment.
  5. Scoop the mixture into 1-inch balls using a cookie scoop or tablespoon. Roll gently between your palms and place on the prepared baking sheet.
  6. Bake for 20 to 25 minutes, rotating the baking sheet halfway through cooking, until the sausage balls are golden brown and fully cooked through.
  7. Remove from the oven and let cool for 5 minutes before serving.
  8. Serve warm with ranch dressing, salsa, honey mustard, or spicy mayo if desired.
