Ingredients

  • 6 large flour tortillas
  • 2 cups cooked shredded chicken
  • 2 cups shredded cheddar or Mexican blend cheese
  • 1 cup bell peppers, sliced
  • 1/2 cup onion, sliced
  • 1 tablespoon olive oil
  • 1 tablespoon taco seasoning
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • Salsa, sour cream, and guacamole for serving

Instructions

  1. Preheat oven to 400°F (200°C) and lightly grease a sheet pan.
  2. Heat olive oil in a skillet and sauté onions and bell peppers for 3–4 minutes until softened.
  3. Add shredded chicken, taco seasoning, salt, and pepper. Stir and cook for 2–3 minutes.
  4. Lay tortillas overlapping on the sheet pan, letting edges hang over the sides.
  5. Spread chicken mixture evenly over tortillas, then sprinkle with cheese.
  6. Fold over the tortilla edges to cover the filling.
  7. Place another sheet pan on top to press down lightly (optional for crispiness).
  8. Bake for 15–20 minutes until golden and crispy.
  9. Remove from oven, let rest for 5 minutes, then slice into squares.
  10. Serve with salsa, sour cream, or guacamole.
