Ingredients

  • 400500 g chicken liver
  • 1 large onion, thinly sliced
  • 23 tablespoons oil or lard
  • 12 cloves garlic, minced (optional)
  • 1 teaspoon sweet Hungarian paprika
  • Salt to taste
  • Black pepper to taste
  • A pinch of dried marjoram (optional)
  • 46 slices fresh bread

Instructions

  1. Rinse chicken liver under cold water, pat dry, and trim any veins or connective tissue.
  2. Heat oil or lard in a skillet over medium heat and sauté onions until soft and lightly golden.
  3. Add garlic if using and cook briefly until fragrant.
  4. Remove pan from heat and stir in paprika to prevent burning.
  5. Return to heat and add chicken liver, seasoning with salt, pepper, and marjoram.
  6. Cook for 8–12 minutes, turning occasionally, until browned outside and tender inside.
  7. Avoid overcooking to keep the liver soft and juicy.
  8. Serve warm over fresh or lightly toasted bread.

  • Use lard for a more traditional flavor.
  • Remove pan from heat before adding paprika to avoid bitterness.
