Ingredients

  • 1015 medium prawns, peeled and deveined
  • 3 large eggs
  • 3 tablespoons spring onion greens, finely chopped
  • 1 pinch salt
  • 3 tablespoons olive oil
  • 1/2 tablespoon rice wine
  • 2 tablespoons water (optional)

Instructions

  1. Pat prawns dry and marinate with rice wine and half the salt for 5 minutes.
  2. In a bowl, whisk eggs with remaining salt, 2 tablespoons spring onion, and optional water.
  3. Heat olive oil in a non-stick pan over medium heat.
  4. Add prawns and cook until nearly done and lightly golden.
  5. Pour in the egg mixture and let sit briefly.
  6. Gently stir and fold eggs with prawns until cooked to desired texture.
  7. Remove from heat while eggs are still slightly soft.
