Ingredients

  • 2 pounds baby potatoes, halved
  • 1 large yellow onion, thinly sliced
  • 4 tablespoons unsalted butter, melted
  • 2 tablespoons olive oil
  • 1 packet onion soup mix
  • 1 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried parsley
  • 1/4 teaspoon paprika
  • 1/4 teaspoon salt
  • Fresh parsley for garnish

Instructions

  1. Wash and dry the baby potatoes thoroughly. Cut larger potatoes into quarters for even cooking.
  2. Lightly grease the inside of the slow cooker with cooking spray or butter.
  3. Add the potatoes and sliced onions to the slow cooker.
  4. In a medium bowl, whisk together the melted butter, olive oil, onion soup mix, garlic powder, black pepper, dried parsley, paprika, and salt.
  5. Pour the butter mixture over the potatoes and onions and toss gently to coat evenly.
  6. Cover with the lid and cook on LOW for 5 to 6 hours or HIGH for 3 to 4 hours until the potatoes are fork tender.
  7. Stir once or twice during cooking if possible to evenly distribute the seasoning.
  8. Sprinkle fresh parsley over the potatoes before serving.
  9. Serve warm alongside chicken, beef, fish, or vegetables.

Notes

  • Baby potatoes, Yukon Gold, or red potatoes all work well.
  • Greasing the slow cooker helps prevent sticking.
  • Add cheddar or parmesan cheese for extra richness.
  • Store leftovers in the refrigerator for up to 4 days.
  • Reheat in the microwave, oven, or skillet with a little butter.
