Ingredients

  • 1 1/2 pounds sirloin steak, cut into 1 to 2-inch pieces
  • 1 tablespoon butter
  • 1 medium onion, sliced into thick wedges
  • 2 tablespoons Worcestershire sauce
  • 2 tablespoons Dijon mustard
  • 2 tablespoons pure maple syrup
  • 2 cloves garlic, minced
  • 1/4 teaspoon freshly ground black pepper
  • 1 cup beef bone broth
  • 8 ounces cremini mushrooms, halved
  • 1 tablespoon cornstarch
  • 2 tablespoons cooking liquid from the slow cooker
  • Fresh parsley, chopped for garnish
  • Salt, to taste
  • Cooked rice, mashed potatoes, or noodles for serving (optional)

Instructions

  1. Cut the sirloin steak into bite-sized pieces and pat dry with paper towels.
  2. Heat a large skillet over medium-high heat and melt the butter. Sear the steak pieces for 1 to 2 minutes per side until browned.
  3. Place the onion wedges into the bottom of the slow cooker and arrange the seared steak bites over the onions.
  4. In a small bowl, whisk together Worcestershire sauce, Dijon mustard, maple syrup, minced garlic, and black pepper.
  5. Pour the sauce mixture over the steak and onions. Add the beef bone broth.
  6. Cover and cook on Low for 3 hours.
  7. After 1 1/2 hours, add the halved cremini mushrooms and stir gently.
  8. About 15 minutes before cooking is complete, whisk together the cornstarch and 2 tablespoons of cooking liquid until smooth.
  9. Pour the cornstarch slurry back into the slow cooker and stir gently. Continue cooking for 15 minutes until the sauce thickens.
  10. Taste and adjust seasoning with salt, pepper, or additional maple syrup if desired.
  11. Garnish with fresh parsley and serve warm over rice, mashed potatoes, or noodles.
