Ingredients

  • 2 cups pecan halves
  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 1 cup unsalted butter
  • 1 cup heavy cream
  • 1/4 cup light corn syrup
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt

Instructions

  1. Toast pecans in a dry skillet over medium heat for 5–7 minutes until fragrant, then let cool.
  2. Line a baking sheet with parchment paper and arrange pecans into small clusters.
  3. In a saucepan, combine granulated sugar, brown sugar, butter, cream, and corn syrup over medium heat.
  4. Stir constantly until butter melts and sugars dissolve.
  5. Bring mixture to a boil and cook until it reaches 115°C (240°F), stirring occasionally.
  6. Remove from heat and quickly stir in vanilla extract and salt.
  7. Spoon hot caramel over each pecan cluster, coating well.
  8. Let clusters cool at room temperature until set but still soft.
  9. Carefully remove from parchment and serve.

  • Use a candy thermometer for best accuracy.
  • Work quickly when pouring caramel as it sets fast.
  • Optional: sprinkle flaky sea salt for a salted caramel flavor.
