Ingredients

  • 1 cup yellow cornmeal
  • 1 cup all-purpose flour
  • 1 tablespoon baking powder

  • 1 cup buttermilk

Instructions

  1. Preheat oven to 400°F (200°C) and grease a mini muffin pan.
  2. Whisk cornmeal, flour, baking powder, baking soda, salt, and sugar in a bowl.
  3. In another bowl, whisk eggs, buttermilk, melted butter, honey, and vanilla.
  4. Combine wet and dry ingredients and mix until just combined.
  5. Spoon batter into mini muffin cups, filling about 3/4 full.
  6. Bake for 10–12 minutes until golden and cooked through.
  7. Mix melted butter, honey, and salt for topping.
  8. Brush warm poppers with honey butter and serve.
