Ingredients

  • 1 cup cooked chickpeas
  • 1 tablespoon olive oil
  • 2 teaspoons chili powder
  • 2 teaspoons smoked paprika
  • 1/2 teaspoon ground cumin
  • 1 teaspoon garlic salt
  • 1/4 teaspoon black pepper
  • 2 cups mixed greens or arugula
  • 1 cup cherry tomatoes, halved
  • 1 medium cucumber, diced
  • 1/4 red onion, sliced
  • 1 ripe avocado, diced
  • 1/4 cup black olives, sliced
  • 3 tablespoons extra virgin olive oil
  • Juice of 1 lemon
  • 1 teaspoon dried oregano
  • 2 cloves garlic, minced
  • 1/8 teaspoon salt
  • 1/8 teaspoon black pepper

Instructions

  1. Preheat oven to 200°C (400°F) and line a baking tray.
  2. Dry chickpeas, toss with olive oil and spices.
  3. Spread on tray and roast for 25–30 minutes until crispy.
  4. Whisk together olive oil, lemon juice, oregano, garlic, salt, and pepper for dressing.
  5. In a large bowl, combine greens, tomatoes, cucumber, onion, avocado, and olives.
  6. Add slightly cooled chickpeas to the salad.
  7. Drizzle dressing over and toss gently before serving.
