Ingredients

  • 6 large eggs
  • 1 cup milk
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded cheddar cheese
  • 2 cups fresh spinach, chopped
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon paprika

Instructions

  1. Preheat oven to 180°C (350°F) and grease a baking dish.
  2. Heat olive oil in a skillet and sauté onion for 3–4 minutes.
  3. Add garlic and cook for 1 minute.
  4. Add spinach and cook until wilted, then set aside.
  5. In a bowl, whisk eggs and milk together.
  6. Add salt, pepper, oregano, and paprika.
  7. Stir in cheeses and spinach mixture.
  8. Pour into baking dish and spread evenly.
  9. Bake for 30–35 minutes until set and lightly golden.
  10. Cool slightly, slice, and serve.
