Ingredients

  • 12 lasagna sheets
  • 3 cups cooked spinach, drained and chopped
  • 2 cups ricotta cheese
  • 2 cups mozzarella cheese, shredded
  • 1/2 cup Parmesan cheese, grated
  • 2 cups tomato sauce
  • 1 large egg
  • 1 garlic clove, minced
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Optional: Italian seasoning, red pepper flakes, fresh basil

Instructions

  1. Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  2. Prepare spinach by cooking, draining well, and chopping.
  3. Mix ricotta, egg, spinach, garlic, salt, and pepper until combined.
  4. Spread a thin layer of tomato sauce in the baking dish.
  5. Add a layer of lasagna sheets.
  6. Spread spinach-ricotta mixture, sauce, and mozzarella over pasta.
  7. Repeat layers until ingredients are used, finishing with sauce and cheese.
  8. Cover with foil and bake for 30 minutes.
  9. Remove foil and bake another 5–10 minutes until golden and bubbly.
  10. Let rest 10 minutes before serving.

Notes

  • Drain spinach very well to avoid watery lasagna.
  • Letting the lasagna rest helps it hold its shape when sliced.
  • Oven-ready noodles can be used without boiling.
  • Add mushrooms or zucchini for extra vegetables.
