Ingredients

  • 2 cups fresh strawberries, washed, hulled, and diced
  • 2 tablespoons granulated sugar
  • 1 teaspoon fresh lemon juice
  • 1 cup heavy whipping cream, cold
  • 2 tablespoons powdered sugar
  • 1 teaspoon pure vanilla extract
  • 8 almond cookies or amaretti-style cookies, roughly crushed
  • 2 tablespoons almond syrup or 1/4 teaspoon almond extract mixed with 2 tablespoons water
  • 4 small whole strawberries, for garnish
  • 1 tablespoon sliced almonds (optional)

Instructions

  1. Wash and dry the strawberries before hulling and dicing them into small pieces.
  2. Place the diced strawberries into a bowl with granulated sugar and lemon juice. Stir gently and let sit for 10 to 15 minutes.
  3. In a small bowl, combine the crushed almond cookies with almond syrup or the almond extract mixture. Stir gently so the cookies soften slightly.
  4. In a chilled mixing bowl, whip the heavy cream, powdered sugar, and vanilla extract on medium speed until soft and fluffy.
  5. Spoon a layer of soaked cookie crumbs into the bottom of each serving glass.
  6. Add a layer of strawberries with some of their juices.
  7. Top with a layer of whipped cream.
  8. Repeat the layers until the glasses are filled.
  9. Finish each parfait with extra strawberries, a whole strawberry garnish, and sliced almonds if desired.
  10. Chill for at least 20 minutes before serving.

  • Fresh strawberries provide the best texture and flavor.
  • Mascarpone or cream cheese can be added to the whipped cream for extra richness.
  • Greek yogurt may replace part of the whipped cream for a lighter dessert.
