Ingredients

  • For the zucchini:
  • 2 large zucchinis, thinly sliced lengthwise
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • For the filling:
  • 1 cup ricotta cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1 garlic clove, minced
  • 1 tablespoon fresh basil (or 1 teaspoon dried basil)
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • For the sauce and topping:
  • 1 cup marinara sauce
  • 1/4 cup shredded mozzarella cheese
  • 1 tablespoon fresh basil or parsley, for garnish

Instructions

  1. Preheat oven to 400°F (200°C) and prepare a baking sheet.
  2. Arrange zucchini slices, brush with olive oil, and season with salt and pepper.
  3. Bake for 5–7 minutes until softened and flexible, then cool slightly.
  4. Mix ricotta, mozzarella, Parmesan, garlic, basil, salt, and pepper until smooth.
  5. Spread about 1 tablespoon of filling on each zucchini slice.
  6. Roll each slice and place seam-side down in a baking dish over marinara sauce.
  7. Top with remaining mozzarella cheese.
  8. Cover and bake for 20 minutes, then uncover and bake 5 more minutes until bubbly.
  9. Garnish with fresh herbs and serve warm.

Notes

  • Pre-bake zucchini to reduce excess moisture.
  • Do not slice zucchini too thick to allow easy rolling.
  • Drain added vegetables well if customizing filling.
  • Serve immediately for best texture.
