Ingredients

  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 3/4 teaspoon kosher salt
  • 1/4 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon paprika
  • 2 tablespoons olive oil or avocado oil
  • 1 medium yellow onion, diced
  • 3 garlic cloves, minced
  • 1 pound ground beef
  • 2 large sweet potatoes, peeled and diced
  • 1 can (15 ounces) fire-roasted diced tomatoes
  • 1 can (4.5 ounces) green chiles
  • 1 cup shredded Mexican cheese blend

Instructions

  1. Mix chili powder, cumin, salt, oregano, garlic powder, onion powder, and paprika in a small bowl.
  2. Heat 1 tablespoon oil in a large skillet and sauté onion until soft, then add garlic.
  3. Add ground beef and cook until browned, adding most of the taco seasoning.
  4. Remove beef and drain excess grease if needed.
  5. Add remaining oil and cook sweet potatoes with remaining seasoning for 10–15 minutes until tender.
  6. Stir in fire-roasted tomatoes and green chiles and simmer for 5 minutes.
  7. Return beef to skillet and mix everything together.
  8. Top with shredded cheese, cover, and let melt for 1–2 minutes.
  9. Serve warm with desired toppings.
