Ingredients

  • 2 boneless, skinless chicken breasts, about 1 pound total
  • 1 cup jasmine rice
  • 1 1/4 cups water
  • 1/4 cup soy sauce
  • 2 tablespoons rice vinegar
  • 2 tablespoons water or chicken broth
  • 2 tablespoons brown sugar
  • 1 tablespoon vegetable oil
  • 1 teaspoon grated fresh ginger
  • 2 garlic cloves, minced
  • 1 tablespoon toasted sesame seeds
  • 2 green onions, thinly sliced

Instructions

  1. Rinse the jasmine rice under cold water until the water runs mostly clear.
  2. Add the rice and 1 1/4 cups water to a medium pot. Bring to a boil, reduce heat to low, cover, and simmer for 15 minutes.
  3. Remove the rice from the heat and let it rest, covered, for 10 minutes.
  4. In a small bowl, whisk together soy sauce, rice vinegar, water or chicken broth, brown sugar, grated ginger, and minced garlic.
  5. Heat vegetable oil in a large skillet over medium-high heat.
  6. Add the chicken breasts and cook for 5 to 6 minutes per side until golden and fully cooked.
  7. Pour the teriyaki sauce into the skillet and reduce the heat to medium.
  8. Simmer for about 5 minutes, turning the chicken occasionally, until the sauce thickens and coats the chicken.
  9. Remove the chicken from the skillet and let it rest for 3 minutes before slicing into strips.
  10. Fluff the rice with a fork and divide it between serving plates.
  11. Top the rice with sliced chicken and drizzle with the remaining sauce.
  12. Sprinkle with toasted sesame seeds and sliced green onions before serving.
