Ingredients

  • 1 cup jasmine rice
  • 2 cups water
  • 300 g shrimp, peeled and deveined
  • 1 cup fresh pineapple chunks
  • 2 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 1/4 cup teriyaki sauce
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • 1 tablespoon honey
  • 1/2 teaspoon black pepper
  • 2 green onions, sliced
  • 1 tablespoon sesame seeds

Instructions

  1. Rinse the rice under cold water, then cook with water in a saucepan until tender, about 15 minutes. Let rest covered for 5 minutes and fluff.
  2. Heat 1 tablespoon oil in a pan over medium heat. Cook shrimp with black pepper for 2–3 minutes per side until pink, then remove.
  3. Add remaining oil to the pan and sauté garlic and ginger for 30 seconds.
  4. Add pineapple chunks and cook for 2–3 minutes until slightly caramelized.
  5. Return shrimp to the pan and add teriyaki sauce, soy sauce, sesame oil, and honey. Stir and simmer for 2–3 minutes until coated.
  6. Serve over rice and garnish with green onions and sesame seeds.
