Ingredients

  • 2 cups roasted peanuts, divided
  • 1/4 cup pure maple syrup
  • 3/4 cup all-natural creamy peanut butter
  • 1/4 cup coconut oil
  • 1/2 teaspoon vanilla extract

Instructions

  1. Line a bread loaf pan with parchment paper, leaving overhang on the sides for easy removal.
  2. Spread 1 cup of roasted peanuts evenly across the bottom of the prepared pan.
  3. In a microwave-safe bowl, combine the maple syrup, peanut butter, coconut oil, and vanilla extract.
  4. Microwave the mixture for 30 seconds, then stir until smooth and creamy. If needed, microwave for another 10 seconds and stir again.
  5. Pour the peanut butter mixture evenly over the peanuts in the pan.
  6. Use a spoon or spatula to smooth the mixture into an even layer.
  7. Sprinkle the remaining 1 cup of peanuts over the top and gently press them into the filling.
  8. Place the pan in the freezer for 1 hour or until firm and fully set.
  9. Lift the chilled mixture out using the parchment paper.
  10. Slice into 8 bars and serve chilled or slightly softened.
