Ingredients

  • 12 ounces spaghetti
  • 3 tablespoons olive oil
  • 6 garlic cloves, thinly sliced
  • 1/2 teaspoon red pepper flakes
  • 5 cups fresh spinach
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons lemon juice
  • 1/4 cup reserved pasta water
  • 2 tablespoons chopped fresh parsley
  • 2 tablespoons vegan parmesan cheese

Instructions

  1. Bring a large pot of salted water to a boil and cook the spaghetti according to package directions until al dente.
  2. Before draining, reserve 1/4 cup of the pasta cooking water. Drain the spaghetti and set aside.
  3. Heat olive oil in a large skillet over medium heat.
  4. Add sliced garlic and cook for about 2 minutes until fragrant, stirring frequently to prevent burning.
  5. Stir in red pepper flakes, salt, and black pepper.
  6. Add the fresh spinach and cook for 2 to 3 minutes until wilted.
  7. Add the cooked spaghetti to the skillet along with reserved pasta water and lemon juice.
  8. Toss everything together gently until the spaghetti is evenly coated in the light sauce.
  9. Sprinkle chopped parsley and vegan parmesan cheese over the pasta.
  10. Serve immediately while warm.
