Ingredients

  • 1 cup wild rice, rinsed
  • 1 tablespoon olive oil
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 3 cups mushrooms, sliced (cremini or button)
  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 6 cups vegetable broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1/2 teaspoon black pepper
  • 1 teaspoon salt
  • 1 cup unsweetened plant-based milk
  • 3 tablespoons all-purpose flour
  • 2 tablespoons nutritional yeast (optional)
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Cook the wild rice according to package instructions and set aside.
  2. Heat olive oil in a large pot over medium heat and sauté the onion for 3–4 minutes until softened.
  3. Add garlic and cook for 1 minute until fragrant.
  4. Stir in mushrooms, carrots, and celery and cook for 6–8 minutes until softened.
  5. Add vegetable broth, thyme, rosemary, salt, and pepper, then bring to a boil.
  6. Reduce heat and simmer for 15–20 minutes.
  7. In a bowl, whisk plant-based milk and flour until smooth.
  8. Slowly stir the mixture into the soup, mixing continuously.
  9. Add cooked wild rice and simmer for 5–10 minutes until thickened.
  10. Stir in nutritional yeast if using and adjust seasoning.
  11. Garnish with fresh parsley and serve warm.
