Ingredients

  • 1 ready-made pie crust
  • 300 g fresh spinach
  • 3 large eggs
  • 150 ml heavy cream
  • 50 g grated cheese such as Gruyère, mozzarella, or cheddar
  • 1 tablespoon olive oil
  • 1 small garlic clove, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 pinch nutmeg (optional)

Instructions

  1. Preheat your oven to 180°C (350°F).
  2. Place the pie crust into a tart or pie dish. Press it gently into the edges and trim any excess dough. Prick the bottom with a fork several times.
  3. Wash the spinach thoroughly and drain well.
  4. Heat olive oil in a skillet over medium heat. Add the minced garlic and cook for about 30 seconds until fragrant.
  5. Add the spinach and cook for 2 to 3 minutes until wilted. Remove from heat and let cool slightly.
  6. Squeeze out as much liquid as possible from the spinach to prevent a watery quiche.
  7. In a mixing bowl, whisk together the eggs, heavy cream, grated cheese, salt, black pepper, and nutmeg until smooth.
  8. Spread the cooked spinach evenly over the pie crust.
  9. Pour the egg and cream mixture over the spinach.
  10. Bake for 35 to 40 minutes, or until the center is set and the top is lightly golden.
  11. Allow the quiche to rest for 5 to 10 minutes before slicing and serving.

Notes

  • Frozen spinach can be used if thawed and drained thoroughly.
  • Gruyère cheese gives the most traditional French flavor.
  • Serve warm, at room temperature, or chilled.
  • Add mushrooms or caramelized onions for extra richness.
  • A homemade crust can be used instead of ready-made pastry.
  • Nutmeg adds subtle warmth but is optional.
