Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 teaspoon baking powder
  • 1/2 cup unsalted butter, cold and cubed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups ricotta cheese, well-drained
  • 1 cup powdered sugar, sifted
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon orange zest (optional)
  • 1/2 cup mini chocolate chips
  • Powdered sugar for dusting
  • Extra mini chocolate chips (optional)
  • Chopped pistachios (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and line a 9×9-inch baking pan with parchment paper.
  2. Mix flour, sugar, and baking powder in a bowl.
  3. Add cold butter and blend until crumbly.
  4. Stir in egg and vanilla extract to form dough.
  5. Press dough evenly into the pan and bake for 15–18 minutes until lightly golden. Cool completely.
  6. Roll remaining dough between parchment to 1/4 inch thickness and bake on a tray for 20–25 minutes until crisp. Cool and crumble.
  7. In a bowl, mix ricotta, powdered sugar, vanilla, and orange zest until smooth.
  8. Fold in mini chocolate chips.
  9. Spread filling over cooled base crust.
  10. Refrigerate for at least 2 hours until firm.
  11. Sprinkle crumbled top crust over filling and press gently.
  12. Lift out, slice into squares, and garnish with powdered sugar, chocolate chips, and pistachios.
